Reflow oven (toaster) heater AC control

alright folks,

i'm working on building reflow oven can reballing of virtex-5 fpgas i've had laying around.

i've got of control notions down code far i'm drawing big blank on how control heater supply able moderate temperature better. far, i've considered -

1) using triac circuit - there seem many examples of online, although notions of triac operation confound me little bit, when trying pwm operation.
2) using ssrs - i've heard complicated fact ssrs designed latch during cycle , therefore not receptive pwm signal.
3) using standard mechanical relay - has advantage of being able handle mass current without latching, issue armatures need 3khz pwm adjustment, disrupt timer operations need perform things automatic temperature sensing , stage of reflow cycle. if resorted option, put clacking.
4) rectifying 120v mains , feeding heater coils straight (albeit unfiltered) dc. allow me use standard high-current fet switch signal, @ expense of having higher heater voltage need compensated (160v+).

do of have experience of these options , have ideas on how accomplish this? i'm willing go complex circuit, if it's understandable - if it's not, i'm still going 1 troubleshooting it.

just use ssr.  don't need pwm heaters, can turn them on ,
off every few seconds (think slow pwm done in software).  there's lot of
thermal inertia in system slow pwm rate won't significant.

an opto-triac heart of ssr, offer cheaper option (but involves
some tinkering on mains side - attempt if competent...)
